Divide the sap by the ratio you type. 80 litres at 40 makes 2.000 litres of syrup, which is 0.528 US gallons. If you also type 2.15 sugar percent, 86 divided by 2.15 is 40.00. That figure is approximate. The volume still uses the ratio in the ratio box.
